Preheat oven to 220 degrees C. Line a baking sheet. Place chopped potatoes in a big bowl field with water for 30 min. Drain liquid and dry potatoes well.
Place chopped potatoes in the bowl and add paprika, thyme, onion powder.
Mix potato well, spread coated potato chips in a single layer, leaving space around each potato, on the prepared baking sheet.
Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.
