Turmeric Fries with homemade vegan tzatziki dip

Ingredients
- 8 big potatoes chopped in 1 cm thick fries
- 1 tablespoon smoke paprika
- 1 tablespoon fresh thyme
- 1 tablespoon onion powder
- 2 teaspoons turmeric
- 6 tablespoons olive oil
- salt and pepper
Vegan tzatziki dip
- ½ cup sunflower seeds soaked for 3 hours 100 g
- ½ cup cashews soaked for 3 hours
- ½ cup water
- 1 garlic clove
- 2 tablespoons dried mint
- Pepper, salt (up to taste)
- Juice of 1½ lemon
- 2 mini pickle cucumbers
- 1 cucumber roughly grated and drained
- 1-2 tablespoons olive oil + extra for garnish
Instructions
- Preheat oven to 220 C. Line a baking sheet. Place chopped potatoes in a big bowl field with water for 30 min. Drain liquid and dry potatoes well.
- Place chopped potatoes in the bowl and add paprika, thyme, onion powder, turmeric, olive oil, salt and pepper.
- Mix potato well, spread coated potato chips in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.
Vegan tzatziki dip
- Drain sunflower seeds, cashews and place them in a blender with the water, garlic dried mint, salt, pepper, lemon juice, pickle cucumbers, olive oil and blend until smooth and creamy.
- Taste and adjust flavour adding more lemon juice, salt or pepper.
- Add grated cucumbers and stir. Let it stand for at least 2-3 hours in the fridge. Serve cold with pita bread, salads, falafel, pasta, stuffed grape leaves (koupepia) or as dipping sauce for veggies!
